The slab you approve in a warehouse and the countertop that ends up in your kitchen are not automatically the same thing. Between those two moments sit a template, a cutting plan, and a set of decisions about where the seams land and how the pattern runs. Most people never see that middle step, which is why two kitchens can come out of identical stone and look nothing alike.
That gap is worth understanding before you shop, because it is where the difference gets made. The countertops Asheville homeowners end up with are rarely the ones with the most expensive stone. They are the ones where somebody thought carefully about how a specific slab would be cut for a specific room.

A sample is not a slab
The small tile in a showroom drawer tells you a color family and nothing else. Natural stone is geological, so movement, veining density, and background tone shift across a single slab and shift much more between slabs from different blocks. Two slabs sold under the same trade name can look like different stones.
This matters practically. If you approve a three inch sample of a granite and the yard pulls whatever is in stock, you can get a piece with far more or far less movement than you pictured. The fix is simple and free: go see the actual slab, and get its number recorded on the paperwork so the piece you stood in front of is the piece that gets cut.
Engineered quartz behaves differently. It is manufactured, so consistency between pieces is high and sample-to-slab surprises are rare. That predictability is a genuine advantage if you dislike variables, and the tradeoff is that you lose the one-of-a-kind character natural stone brings.
Seams are a design decision
Every kitchen longer than a slab needs a seam. Slabs commonly run somewhere around nine to ten feet, so a typical run plus an island means at least one, often more. The question is never whether you get a seam. It is where it goes and who chose.
Left unmanaged, seams land wherever the cutting plan is most efficient for the shop. Managed well, they get placed where they are least visible and least stressed. A few principles hold up:
Seams belong away from the primary sightline, the view you get walking into the room. Pushing a seam six inches to sit behind a faucet or under a natural break in the pattern costs nothing and changes how the top reads.
Seams should not run through a sink cutout if it can be avoided. The stone is narrowest there and it is the wettest part of the counter.
Seams across an unsupported span are a structural question, not just a cosmetic one. Around cooktop cutouts especially, the remaining stone is thin, and where the seam sits relative to that cutout affects how the top handles being leaned on for a decade.
Ask to see the seam plan before fabrication. A shop that has thought about it will have one ready. A shop that has not will tell you it does not matter, which is the answer that tells you the most.
Movement, and what bookmatching actually is
Bookmatching means two adjacent slabs cut from the same block, opened like a book so the veining mirrors across the seam. Done on a waterfall island or a full height backsplash it is genuinely striking. It also requires that both slabs were bought together and cut with that intent, so it is a decision made at purchase, not later.
Even without bookmatching, vein direction is worth specifying. On a heavily veined marble or quartzite, running the movement along the length of an island looks deliberate, while running it across the short axis usually does not. Fabricators can lay the template digitally over a photograph of the slab and show you the yield before anything is cut. Ask for that. It is a five minute conversation that prevents the most common regret in stone.
Thickness, edges, and overhang
Three centimeter stone is the standard for kitchen counters and is what most quotes assume. Two centimeter exists and is more common in baths or where a thin modern profile is wanted, but it needs more substrate support underneath.
Edge profile is mostly aesthetic, with one practical note: the more elaborate the profile, the more it collects. A simple eased or pencil edge wipes clean; a heavily ogee’d edge has places for grime to sit. Mitered edges, where two pieces are joined at 45 degrees to fake a thicker slab, look expensive because the labor genuinely is.
Overhang is where people get surprised. Unsupported stone can cantilever roughly ten to twelve inches depending on material and thickness. Templating is where the plan meets the room
Digital templating happens after cabinets are set and level, not before. The template captures what the room actually is rather than what the drawings said, which in older houses is a meaningfully different thing. Walls out of square, floors that slope, and cabinet runs that are a half inch off all get absorbed here.
This is also the last practical moment to change your mind about sink style, faucet drillings, and cooktop placement, because all of those become holes cut in the shop. After templating, changes mean new stone.

Natural stone gets sealed at install, and the useful question is not how often to reseal but how to tell. Darkening means the stone is absorbing and it is time. Depending on the stone and how the counter gets used, that can be annually or it can be every several years.
